Trial and error sees butchers snag a victory

A CHEF-LIKE approach to creating sausages has earned Warana butchers Paul Rae and Rob Glenny the regal title of snag royalty.

Their Aussie Smokehouse butcher shop took out five of the seven categories at the Sunshine Coast and Burnett region Sausage King and Best Butcher's Burger Competition.

Mr Rae said a trial and error approach to flavour balance as well as making their sausages from scratch with fresh ingredients grabbed the judges' praise.

His lamb coconut curry sausage required 27 elements when made from scratch at the competition.

"It was the second time I'd made it," Mr Rae said.

He thought the final offering was missing something, but the 10 out of 10 feedback made him think maybe he had got the recipe right.

Mr Rae said the competition was a great chance to showcase the work butchers put into their trade as well as share tips among each other.

"We all coach each other on different things."

The winning entries will next compete at the state final in Brisbane on August 16.
