The authentic Indian you won't find in most restaurants

What have you cooked?
Curry of beans, snow peas, lentils, salad, rice and traditional Indian bread. He hasn't cooked. Men in India don't cook.
How long did it take?
It took me nearly an hour and a half. I cook every day and cook everything from scratch.
What's your secret?
We always make it from Indian spices, turmeric, coriander powder, red chilli powder, curry leaves and fresh coriander as well.
What do you enjoy making?
Lentils. You boil them and then mix in the spices and let it boil. It seems easy but if you don't know how to do it is very hard. I also make the Indian bread. We make the dough, roll it out and put it on the gas stove. You can use an electric plate but it is not as tasty.
Who taught you how to cook?
Mumma. She used to cook in the kitchen and in my childhood I would join her and that's how I learnt to cook.
Why isn't there any meat?
We don't eat meat. This is traditional western food from Gujarat. Most of the food in Indian restaurants in Australia is Punjabi food from the north. This is different. If you go on YouTube you can learn how to cook all of this.
What is your favourite ingredient?
For me it would have to be coriander powder. I don't cook anything without coriander.
