
Sunday sessions making sangas (with a glass of wine)
SUNDAY afternoons are a great time to save mums and dads some sanity for the upcoming week. Because being a parent of school-aged kids is bloody hard.
Getting the little buggers out of the house on time, appropriately dressed with teeth brushed, no boogers, and in matching shoes is a feat that deserves a medal.
So to ensure that I don't become a screaming fishwife during the week I have a Sunday arvo of making sandwiches in bulk to freeze (with a glass of wine).
I bake healthy muffins full of grated vegetables because if my boys even suspect there is something green or orange in their food they will barf it into a pot plant - freeze them into individual cute little portions in a cute little polka dot cupcake paper.
So a week's worth of sandwiches and muffins are done (they all freeze really beautifully - nicely stacked in the freezer next to the vodka bottle).
Not only does this make school lunches in the mornings so much easier (grab out a frozen sanga, grab out a frozen muffin, add some fruit and yogurt) - but then I have time to actually finish a cup of coffee while it is still hot. Think I'm over exaggerating on that one? Ask any mother during school pick-up time.
Things that freeze really well on sandwiches include jam, ham, grated cheese, Vegemite… well pretty much everything except salad. But seriously, who eats salad on a sandwich - pfft.
