Fancy flavours the latest trend in evolution of ice cream

HE might be the inventor of new and exciting ice creams, but Home Ice Cream chemist and chief executive Wayne Reisinger's favourite flavour is still vanilla.

Mr Reisinger knows that with each new generation of ice cream lovers, there are new flavours to be created.

He explained the combination of market trends for the summer and said people were opting for fruity flavours, or extreme indulgence.

"People want natural flavours and colours - low fat ice cream and frozen yoghurt is big at the moment," Mr Reisinger said.

"On the other hand, our indulgence range has been extremely popular this summer. If you're going to treat yourself, treat yourself."

The gourmet range included flavours like gourmet mango with macadamia nuts, vanilla with salted caramel ripple and rum and raisin.

"People still love the old favourites like vanilla, chocolate, rum n raisin and peppermint," he said.

"Beyond that core group, there is an endless list. Everyone has a flavour they are passionate about."

The ice cream expert believed that the enjoyment of ice cream was often linked with an event.

"People always seem to remember where they had the ice cream they loved."

Mr Reisinger said he hoped to one day experiment with savoury ice cream.

With the recent heat waves, the staff at Home Ice Cream enjoyed a boost in sales.
