EVERYONE loves a good basil pesto.
Whether it's to have with crackers, as a pizza base or on a toasted Turkish sandwich, it can be the difference between a drab snack, and heaven in your mouth.

Sweet Basil Italiano Pesto
2 cups of fresh basil leaves
½ cup parmesan cheese, grated
½ cup olive oil
Handful of pine nuts
3 cloves of garlic, minced
Salt and pepper
Place the basil leaves and pine nuts into a food processor and pulse several times.
Add garlic and parmesan cheese and pulse some more.
While the food processor is still running, slowly add the olive oil. This will help it emulsify and stop the oil from separating.
Add salt and pepper to taste.
This is delicious as an alternative to a pizza base sauce, or on baked potatoes, crackers or fresh bread.
Fun fact: The ancient Greeks believed basil was a herb of hate and to make it grow, you had to scream wild curses at it while sowing the seeds.
